You can't. The latest topics feature simply shows all the forum's recent posts. Why would you not want yours to show up?

Something others might not know; If you used "Recent Posts" to get to that list. After you send a new reply to a post, if you click and hold the back arrow until the dropdown list appears, you can then click on "Advanced Search" and it will take you to the new posts again and refresh it.
